This is my mothers recipe for Lemon Chicken and it is so yummy. I serve it with steamed white rice & green veggies.
Ingredients
- 1/2 cup Wesson Oil
- 1/2 cup Soy Sauce
- 1/2 cups freshly squeezed Lemon Juice
- 1 teaspoon ginger
- 1 teaspoon garlic
Directions
- Combine all ingredients in bowl and whisk until combined.
- Place 4 boneless/skinless chicken breast in bowl, make sure marinade covers the chicken. Let marinade for at least 4 hours.
- Remove chicken from marinade and place in baking dish that has been lightly sprayed with Pam.
- Bake at 350 for 40 to 50 minutes depending on size of chicken breast. Can also be cooked on the grill.
- Enjoy!
