  • 1 head cabbage, clean & quartered, with each quarter halved
  • Salt & pepper to taste
  • 1 extra lg. onion, minced
  • 1 extra lg. bell pepper, minced
  • 2-3 stalks celery, minced
  • 2 cloves garlic, minced
  • 2-3 sprigs parsley, minced
  • 1 lg. pound minced or possibly grnd beef
  • 2 c. cool cooked rice or possibly 2 c. minute rice (salted & water)

Directions

  1. Optional: 1/2 can tomato sauce or possibly 1 large tomato, peeled and minced. Spray large frying pan (which has a good cover) with Pam. Brown meat (leave drippings unless too fat). Add in onions, bell peppers, etc. and stirring, saute with meat till onions are clear. Add in cabbage. Season all very well to taste. Add in approximately 2 cups hot water and rice. Stir all well together and cover, simmer, stirring occasionally.If too dry, add in water, if too wet, uncover after cooking. Cook till cabbage is tender.
  2. Serves 4-6, depending on hunger. If tomato sauce or possibly tomato is used, cut on water to approximately 1 1/2 cups. Serve with green salad. Very Quick - start to finish, approximately 1 hour.
  3. Note: Okra can be substituted for cabbage, but do not add in rice. Put over cooked rice (or possibly do without, can add in smoked sausage to this when with okra). Add in 1 tbsp roux to mix before simmering. Better not to add in water, also, just cover and simmer real slow!
