  • 2 x 15.5 ounce cans black beans, (rinsed & liquid removed), mashed
  • 1/2 c. minced tomato
  • 1/2 c. minced cucumber
  • 1/3 c. sliced ripe olives
  • 1/4 c. minced green onions
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp Greek seasoning
  • 1 x 4 ounce pkg tomato-basil feta cheese, crumbled

Directions

  1. Spread beans in a shallow 9-inch dish. Combine tomato and next five ingredients and toss gently. Sprinkle tomato mix over beans. Top with crumbled feta cheese. Cover and refrigeratethoroughly.
