  • 6 Tbsp. Butter
  • 6 Tbsp. All-purpose flour
  • 1 tsp Salt
  • 6 c. Warm lowfat milk
  • 1 c. Grated Parmesan cheese
  • 1 c. Grated Mozzarella cheese
  • 6 Tbsp. Butter
  • 3 Tbsp. Extra virgin olive oil
  • 1 x Onion, finely minced
  • 1 x Carrot, finely minced
  • 1 stalk celery, finely minced
  • 2 x -(up to)
  • 3 slc Bacon, minced
  • 6 ounce Chopped pork
  • 6 ounce Chopped beef
  • 2 ounce Sausage
  • 3 x Chicken livers
  • 1 c. Dry white wine Salt & pepper
  • 2 Tbsp. Tomato paste
  • 2 c. Beef stock (see recipe)
  • 1/4 lb Mushrooms, minced
  • 1/2 x Clove garlic, pressed
  • 1/2 c. Minced parsley

Directions

  1. 1. Preheat oven to 375.
  2. 2. Cover bottom of greased deep, round baking dish with 1/3 lasagna noodles. Cover with 1/2 the Cheese Sauce. Spread 1/2 the Meat Sauce over the Cheese Sauce. Repeat layers, ending with a layer of noodles.
  3. 3. Sprinkle with cheeses. Dot with butter. Bake in preheated oven 1 hour or possibly till golden brown on top. Serve Immediately. GREEN LASAGNA NOODLES: Prepare as directed in Green Pasta Dough recipe (see Index) except roll out somewhat thicker than described & cut into 2-inch-wide strips. CHEESE SAUCE:
  4. 1. Heat butter in heavy saucepan over moderate heat. Remove from heat; stir in flour & salt. Cook, stirring constantly, till flour dissolves. Don't let brown.
  5. 2. Graduallly add in warm lowfat milk, stirring constantly with a wire whisk. Cook & stir till thickened & smooth.
  6. 3. Add in cheeses & stir till melted. MEAT SAUCE
  7. 1. Heat 3 TBS. butter & oil. Add in onion, carrot, celery, & bacon; fry gently till just beginning to brown.
  8. 2. Add in pork, beef, sausage, & liver. Add in wine & cook till it evaporates.
  9. Season with salt & pepper.
  10. 3. Dilute tomato paste in stock; add in to meat mix. Cover & cook slowly for 1 hour.
  11. 4. Saute/fry mushrooms, garlic, & minced parsley in remaining 3 TBS. butter.
  12. Mix into sauce.
