La Madeleine's Shrimp Pastis

Ingredients

  • 18 x shrimp
  • 3 ounce diced tomato
  • 3 tsp sliced garlic
  • 15 ounce beurre blanc sauce
  • 3 ounce pastis (in squeeze bottle)
  • 3 tsp Salt & Pepper Mix (four parts salt to one part black pepper)
  • 3 ounce extra-virgin extra virgin olive oil
  • 3 tsp minced fresh parsley for garnish

Directions

  1. Heat a 10-inch saute/fry pan over a medium flame. Add in 1 oz extra-virgin extra virgin olive oil to the heated pan. Once oil is warm, add in shrimp, tomatoes, garlic, and the salt pepper. Saute/fry approximately 2 min, till shrimp are almost cooked and garlic is browned.
  2. Remove saute/fry pan from stove. Add in pastis, keeping pan away from face as it will flame up. Place pan back on stove. Once flame is gone, add in beurre blanc sauce and heat for 30 seconds.
  3. Garnish with minced parsley and serve.
