This is a great snack/breakfast and a good use of left over Chapatis/Rotis. This is also known as Kuskara and Fodnichi poli.
This is a typical Maharashtrian Dish (From Western Indian state of Maharashtra)
Inspiration for this recipe came from my mom. Anytime we have enough left over Chapatis, we used to get Kuskara for snacks.
Now sometimes I deliberately make some extra Chapatis so that I can make Kuskara the next day for breakfast.

Directions

  1. In a Grinder, grate the Chapatis/Rotis slightly so that they will become a mixture of small flakes
  2. Add oil on to a pan
  3. When the oil is heated put Mustard Seeds in to it and allow them to splatter.
  4. Add Green chilies and Curry leaves and Sauté for 2-3 minutes.
  5. Now add cut Onions and cover it. Let them cook on medium to low heat.
  6. When the Onions are light golden brown, add turmeric to it.
  7. Add Grated Chapatis/Rotis and stir it well.
  8. Now add salt, sugar, baked peanuts, peas and cover it for 3-4 minutes.
  9. Garnish it with Coriander and serve.

    This is the one ...which is my weakest point...i jus luv it...with dahi or taak..or without. Have you tried with Bhakri..its also awsome...jus luv kuskara..

      Great Idea!!! I always wonder what to do with any left over chapatti this is a keeper for me!
