  • 6 c. 2% low-fat lowfat milk
  • 3/4 c. Evaporated skimmed lowfat milk
  • 2/3 c. Grnd Kona coffee
  • 3/4 c. Sugar
  • 2/3 c. Light-colored corn syrup Chocolate Cookie C. Grated semisweet chocolate, (optional)
  • 1/2 c. Sugar
  • 3 Tbsp. All-purpose flour
  • 3 Tbsp. Quick-cooking oats
  • 2 Tbsp. Finely minced almonds
  • 1 Tbsp. Unsweetened cocoa
  • 1/4 Tbsp. Salt
  • 2 Tbsp. Margarine, melted
  • 1/2 Tbsp. Vanilla extract
  • 1/4 tsp Almond extract
  • 3 x Egg whites, lightly beaten Vegetable cooking spray

Directions

  1. INSTRUCTIONS FOR Kona Coffee Ice Lowfat milk: Combine first 3 ingredients in a saucepan; cook over low heat 30 min. Remove from heat; cover and let stand 20 min.
  2. Strain mix into a bowl; throw away coffee grounds. Add in sugar and corn syrup; stir well.
  3. Pour mix into freezer can of an ice-cream freezer; freeze according to manufacturer's instructions. Spoon ice lowfat milk into a freezer-safe container; cover and freeze for at least 2 hrs.
  4. Yield: 12 servings (serving size:2/3 c. ice lowfat milk and 1 cookie).
  5. INSTRUCTIONS FOR Chocolate Cookie C.: Combine the first 6 ingredients in a medium bowl. Combine margarine, extracts, and egg whites; stir well. Add in to dry ingredients, stirring just till dry ingredients are moistened.
  6. Coat baking sheets with cooking spray; using a finger, trace 12 (3-inch)
  7. circles on baking sheets. Spoon 1 Tbsp. batter into center of each circle; spread batter to outside edge of each circle. Bake at 350 degrees for 10 min or possibly till edges appear dry.
  8. Remove cookies from pan immediately, and place each cookie over an inverted 6-oz custard c. (or possibly jar) coated with cooking spray. Shape the cookies around custard c. to create cookie c., and let cold completely.
  9. Yield: 1dozen (serving size: 1 cookie).
