  4. (Makes 2 c.)
  5. 1/2 c. diced kiwano melon1/2 c. fresh pineapple chunks1 tsp. chopped jalapeno pepper1/4 c. minced red onion2 Tbsp. olive oil1/2 tsp. chopped garlic1 Tbsp. raspberry vinegar1 Tbsp. lime juice2 Tbsp. fresh cilantro or possibly 1 1/2 tsp. dry 1 tsp. pepper
  6. Combine melon, pineapple, jalapeno, and onion in bowl. In separate bowl, whisk together oil, garlic, vinegar, lime juice, and spices. Pour over salsa and gently toss. Kiwano Pineapple Salsa may be refrigerated for up to 1 week.
