Ingredients
- 8 c. finely-minced cabbage - (abt 1 head)
- 1/4 c. shredded carrot - (1 med carrot)
- 2 Tbsp. chopped onion
- 1/3 c. granulated sugar
- 1/2 tsp salt
- 1/8 tsp freshly-grnd black pepper
- 1/4 c. lowfat milk
- 1/2 c. mayonnaise
- 1/4 c. buttermilk
- 1Â 1/2 Tbsp. white vinegar
- 2Â 1/2 Tbsp. lemon juice
Directions
- Be sure cabbage and carrots are minced up into very fine pcs (about the size of rice).
- Combine the sugar, salt, pepper, lowfat milk, mayonnaise, buttermilk, vinegar, and lemon juice in a large bowl and beat till smooth. Add in the cabbage, carrots, and onion, and mix well.
- Cover and chill for at least 2 hrs before serving.
- This recipe yields 10 to 12 servings.
