Ingredients
- For the Coconut Macaroon Crust:
- 2/3 cup sweetened condensed milk
- 1 large egg white
- 1 1/2 teaspoons vanilla
- 1/8 teaspoon salt
- 3 1/2 cups sweetened coconut
- For the Key Lime Filling:
- 1 (14-ounce) can sweetened condensed milk
- 4 large egg yolks
- Zest of 1 large lime
- 1/2 cup lime juice

%3C/p%3E%3Cp%3EJosh%20isn%E2%80%99t%20a%20huge%20dessert%20fan,%20I%20know,%20what%20is%20wrong%20with%20him?%20%20He%20loves%20lime%20desserts%20though.%20I%20am%20always%20trying%20to%20come%20up%20with%20new%20lime%20recipes%20for%20him.%20A%20few%20of%20his%20favorites%20include:%20Key%20Lime%20Pie,%20Key%20Lime%20Tart,%20Coconut%20Lime%20Cupcakes,%20Lime%20Bars,%20and%20Lime%20Coconut%20Snowballs.%20He%20is%20a%20lime%20lover!%3C/p%3E%3Cp%3EI%20wanted%20to%20mix%20things%20up%20this%20year%20so%20I%20created%20a%20coconut%20macaroon%20crust%20to%20go%20with%20his%20favorite%20key%20lime%20pie%20filling!%20Josh%20loves%20coconut%20too%20so%20I%20knew%20he%20would%20love%20my%20twist%20on%20the%20traditional%20key%20lime%20pie.%20And%20you%20really%20can%E2%80%99t%20go%20wrong%20with%20the%20coconut%20and%20lime%20combo!%20They%20are%20a%20match%20made%20in%20heaven!%3C/p%3E%3Cp%3ETo%20get%20the%20pie%20party%20started,%20I%20used%20my%20favorite%20coconut%20macaroon%20recipe.%20Instead%20of%20making%20cookies,%20I%20pressed%20the%20coconut%20mixture%20into%20a%20pie%20pan!%20I%20wasn%E2%80%99t%20sure%20it%20would%20work,%20but%20my%20fingers%20were%20crossed:)%20I%20partially%20baked%20the%20crust%20so%20it%20would%20set%20up%20a%20bit%20before%20putting%20in%20my%20filling.%3C/p%3E%3Cp%3ENext,%20I%20whisked%20up%20a%20tart%20key%20lime%20filling%20to%20go%20inside%20my%20sweet%20coconut%20macaroon%20crust.%20I%20baked%20the%20pie%20and%20pulled%20it%20out!%20It%20looked%20perfect!%20The%20crust%20was%20light%20golden%20brown%20and%20the%20key%20lime%20filling%20was%20smooth%20and%20set!%3C/p%3E%3Cp%3EI%20let%20the%20pie%20chill%20in%20the%20fridge%20for%20about%20an%20hour%20and%20then%20it%20was%20time%20to%20slice%20the%20pie%E2%80%A6and%20see%20if%20my%20new%20creation%20worked:)%20The%20pie%20sliced%20beautifully!%20I%20gave%20the%20first%20slice%20to%20the%20birthday%20boy%20and%20he%20didn%E2%80%99t%20hesitate%20to%20dig%20in%20with%20his%20fork.%20He%20loved%20the%20pie!%20Yahoo!%20My%20new%20lime%20dessert%20was%20a%20success!%3C/p%3E%3Cp%3EI%20enjoyed%20a%20piece%20too!%20I%20will%20warn%20you,%20this%20pie%20is%20super%20sweet,%20so%20cut%20small%20pieces%E2%80%A6or%20enjoy%20a%20big%20piece%20and%20go%20into%20a%20sugar%20coma.%20Josh%20didn%E2%80%99t%20seem%20to%20mind%20his%20big%20piece:)%3C/p%3E%3Cp%3EKey%20Lime%20Pie%20with%20Coconut%20Macaroon%20Crust%20is%20a%20fun%20twist%20on%20the%20classic%20pie!%20It%20is%20fun%20to%20mix%20things%20up%20every%20once%20in%20awhile!%20We%20love%20this%20pie%20and%20I%20think%20you%20will%20too!%20Enjoy!%3C/p%3E%3Cp%3EKey%20Lime%20Pie%20with%20Coconut%20Macaroon%20Crust%3C/p%3E%3Cp%3EYield:%20Serves%208-10%3C/p%3E%3Cp%3EPrep%20Time:%2015%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2020-25%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%2040%20minutes,%20plus%201%20hour%20chill%20time%3C/p%3E%3Cp%3EKey%20Lime%20Pie%20with%20a%20sweet%20coconut%20macaroon%20crust!%20The%20lime%20and%20coconut%20combination%20is%20a%20winner!%20We%20love%20this%20twist%20on%20the%20classic%20pie!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20350%C2%B0F.%20Spray%20a%209-inch%20pie%20pan%20with%20non-stick%20cooking%20spray.%20Set%20aside.%3C/p%3E%3Cp%3E2.%20First,%20make%20the%20crust.%20In%20a%20large%20bowl,%20stir%20together%20the%20sweetened%20condensed%20milk,%20egg%20white,%20vanilla%20extract,%20and%20salt.%20Stir%20until%20combined.%20Add%20in%20the%20coconut%20and%20mix%20well.%20Press%20coconut%20mixture%20into%20prepared%20pie%20pan.%20Make%20sure%20you%20press%20the%20mixture%20up%20the%20sides%20to%20form%20a%20nice%20pie%20crust.%20Bake%20for%2010-12%20minutes.%20Remove%20from%20oven%20and%20let%20cool.%3C/p%3E%3Cp%3E3.%20To%20make%20the%20key%20lime%20pie%20filling,%20in%20a%20medium%20bowl,%20whisk%20together%20the%20sweetened%20condensed%20milk%20and%20egg%20yolks.%20Whisk%20until%20well%20combined.%20Add%20in%20the%20lime%20zest,%20and%20lime%20juice.%20Whisk%20until%20smooth.%20Pour%20filling%20over%20the%20coconut%20macaroon%20crust.%3C/p%3E%3Cp%3E4.%20Bake%20for%2015-17%20minutes,%20or%20until%20filing%20is%20set%20and%20the%20coconut%20crust%20is%20golden%20brown%20around%20the%20edges.%20Remove%20from%20oven%20and%20cool%20on%20a%20cooling%20rack.%20When%20cool,%20chill%20the%20pie%20in%20the%20refrigerator.%20The%20filling%20will%20set%20up%20as%20it%20cools.%20Chill%20for%20at%20least%20one%20hour%20before%20serving.%3C/p%3E%3Cp%3ENote-if%20you%20can't%20find%20key%20limes%20you%20can%20use%20regular%20limes%20for%20the%20juice.%20You%20can%20also%20use%20bottled%20key%20lime%20juice%20if%20you%20wish.%3C/p%3E){kind=link}
