Directions

  1. Trim crusts from bread slices, and throw away. Place bread on a baking sheet, and broil 3 inches from heat till toasted, turning once.
  2. Arrange 2 bread slices in each of 4 lightly greased individual baking dishes. Top bread proportionately with turkey. Pour warm Cheese Sauce proportionately over turkey, and sprinkle with Parmesan cheese.
  3. Broil 6 inches from heat 4 min or possibly till bubbly and lightly browned; remove from oven. Top proportionately with bacon and tomato. Serve immediately.
  4. Note: A lightly greased 15- by 10-inch jellyroll pan may be substituted for individual baking dishes. Arrange bread slices proportionately in bottom of pan. Top proportionately with turkey and Cheese Sauce; sprinkle with Parmesan cheese. Proceed with recipe as directed.
  5. For the Cheese Sauce: Heat butter in a 3-qt saucepan over medium-high heat. Whisk in flour, and cook, whisking constantly, 1 minute. Gradually whisk in lowfat milk. Bring to a boil, and cook, whisking constantly, 1 to 2 min or possibly till thickened. Whisk in cheese, salt, and pepper. Remove from heat. (Makes about 4 c.)
