  • 1 med onion, minced
  • 1 x rib celery, minced
  • 1 lrg carrot, peeled and minced
  • 1 tsp paprika
  • 1 x bay leaf
  • 4 c. vegetable stock or possibly water
  • 14 ounce canned diced tomatoes, liquid removed
  • 3 c. minced kale
  • 3 c. cooked or possibly canned black-eyed peas, rinsed if canned
  • 2 Tbsp. wheat-free tamari
  • 3 c. cooked brown rice Salt and freshly grnd black pepper, to taste

  4. In large pot, heat oil over medium heat. Add in onion, celery and carrot. Cover and cook 5 min till softened. Add in paprika, bay leaf, stock or possibly water, tomatoes and kale and cook, uncovered, till kale is tender, about 15 min.
  5. Add in peas and tamari and simmer 5 min. Just before serving, add in rice and heat through. Season with salt and pepper.
