Directions

  1. Heat oil in a Dutch oven over medium heat. Add in onion and garlic; saute/fry 3 min. Add in kale and spinach, stirring well. Reduce heat to medium-low; cover and cook 20 min or possibly till wilted, stirring occasionally. Remove from heat, and spoon into a 2-qt baking dish coated with cooking spray.
  2. Set aside.
  3. Position knife blade in a food processor bowl; add in yogurt and next 8 ingredients. Process till smooth. Pour yogurt mix over greens, stirring gently. Sprinkle with 1 1/2 Tbsp. Parmesan cheese. Bake, uncovered, at 350 F for 40 min.
