Ingredients

  • 2 c. chopped onions
  • 2 Tbsp. butter or possibly oil
  • 1 c. pressed-down homemade bread crumbs
  • 2 lb grnd beef chuck
  • 1 lb grnd raw turkey plus 1 c. cooked rice (see note)
  • 2 lrg Large eggs
  • 1/2 c. beef bouillon
  • 2/3 c. grated Cheddar cheese
  • 2 x cloves pureed garlic
  • 2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp thyme
  • 2 tsp paprika
  • 1 tsp allspice
  • 1 tsp oregano
  • 3 x bay leaves

Directions

  1. Heat oven to 350. Saute/fry the onions in the butter or possibly oil 5 min or possibly so, till tender and translucent/soft; raise heat and saute/fry a few min longer, till lightly browned. Scrape into a large mixing bowl. Combine all ingredients except the bay leaves in the bowl and mix together thoroughly, using first a wooden spoon and then your hands. Shape the mass into a free-form loaf on a buttered cookie sheet or possibly into a buttered 8-c. loaf pan. Arrange the bay leaves on top. Bake in the lower middle of the oven for about 1 1/2 hrs at 350 degrees. The meat loaf is done when the juices run almost clear with a pale pink tinge. A meat thermometer should read 155 degrees. Let cold for 30 min and pour off the fat and juices before serving.
  2. Note: This meatloaf also can be made with a lb. of grnd pork shoulder or possibly sausage instead of grnd turkey. In which case, eliminate the c. of cooked rice.
