Ingredients
- 2 T extra virgin olive oil
- 2 cloves crushed garlic
- 2 lbs. green beans, cut into 1-inch lengths
- 1 1/2 lbs. canned tomatoes, minced with juice
- 1 T minced chives
- 1 bay leaf
- 1 T pine nuts
- Salt and pepper to taste
- 1 T lemon juice
Directions
- Saute garlic in extra virgin olive oil for 2 min, stirring. Add in beans and cook for 4 min, stirring constantly. Stir in tomatoes with liquid from can and remaining ingredients. Bring to a boil. Reduce heat to low and simmer 25 to 30 min. Remove form heat and throw away bay leaf. Serve at once. Makes 6 servings.
