Ingredients
- Â Â roasted red peppers
- Â Â pickled red onions
- Â Â extra virgin olive oil
- Â Â feta cheese
Directions
- Spoon roasted peppers into four individual baking dishes. May put some pickled red onions on top of each pepper. (Can put a thin slice of extra virgin olive oil quick-fried aubergine slices on bottom!) Put a slice of feta on top and drizzle with herbed extra virgin olive oil. Bake at 350 f or possibly 180 c for 10-15 min until cheese is melted and peppers are bubbling.
