Jalapeno Pineapple Chutney2 Recipe

Ingredients

  • 8 x jalapenos seeded and minced
  • 7 c. canned pineapple chunks (drain and reserve syrup)
  • 3 c. white vinegar
  • 2 c. firmly packed brown sugar
  • 2 x tea salt
  • 1 c. raisins
  • 2 x Tab finely minced candied gingerroot
  • 3 clv garlic -- crushed

Directions

  1. Add in the reserved pineapple syrup to a large kettle. Add in the peppers, vinegar, brown sugar, salt, raisins, gingerroot and the garlic to the kettle and bring to a boil. Reduce heat and simmer for 10 min. Add in the pineapple chunks and simmer for about 45 min or possibly till thick. Pour into warm sterlized jars; seal.
  2. Makes 6 c.
