My own creation using my jalapeno garlic clarified butter. It puts a southwest/spice twist on eggs benedict.
Ingredients
- 2egg yolks
- 1/2 lemon juice
- 1/2cup jalapeno butter melted
- 1/2 tspn tabasco sauce
- salt tt
- pepper tt
- water incase it thinkens up on you. If you have to usse a lil water just splash it, it goes a long way.
Directions
- 1. temper yolks in a bowl over a steam bath wisking constantly until thinkens a lil bit. If yolks start to scramble or harden romove from heat.
- 2. When yolks have thickend up a little bit add lemon juice, while wisking add butter slowly to prevent cooking eggs more.
- 3 add tabasco, salt, and pepper. Also add your water if needed
