Ingredients

  • 4 Jack Link's Wild Side Sausages Jalapeño or Beef or a combination of sausages
  • 2 potatoes, approximate 1 pound total weight, scrubbed clean
  • 1 sweet potato 8-12 ounce total weight, scrubbed clean
  • 1 TBSP cooking oil
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • optional 1-2 jalapeños
  • 1/4 of a large white onion
  • 4 eggs
  • diced avocado
  • Creamy Chipotle Sauce-recipe follows
  • preheat oven to 400˚
  • put 12 inch skillet on medium high heat
  • butterfly the sausages and pop them in the skillet to brown up
  • while the sausages brown cut the potatoes to a medium dice, approximately 1/2 squares, leave the skins on for an added vitamin boost
  • once the sausages have browned on both sides remove them to a plate
  • add the cooking oil and let it heat while you finish chopping the potatoes
  • once the oil is hot carefully add the potatoes
  • cover and let them cook for 5 minutes, stirring halfway through
  • while the potatoes cook chop the peppers and onions
  • after 5 minutes add the peppers and onions, stir to combine and fry for 5 more minutes, again stirring halfway through
  • after 5 minutes turn off the heat, add salt and pepper to taste
  • lay the sausages over the potatoes
  • make 4 wells in the potatoes by pressing down on them with a spoon
  • break an egg in each well
  • cover and put in the oven for 5-8 minutes, 5 minutes for soft set eggs 8 minutes for eggs cooked all the way through
  • make creamy chipotle sauce if you haven't made it already
  • Creamy Chipotle Sauce
  • 1/4 cup plain yogurt or sour cream
  • 1/4 mayonnaise
  • 1/4 cup Smoky Chipotle Salsa
  • 2-3 drops liquid smoke
  • 1/2 teaspoon smoked paprika
  • mix together and refrigerate until ready to use, can be made ahead of time
