Italian Style Sausage Bean Soup

Ingredients

  • 1 1/4 c. dry Great Northern beans soaked overnight
  • 1 can Italian style (plum) tomatoes - (14 ounce) minced
  • 1 can beef broth - (14 ounce)
  • 2 c. cubed yellow squash or possibly zucchini
  • 3/4 lb Italian sausage
  • 1 med onion minced
  • 1 x garlic clove chopped
  • 1/3 c. dry red wine
  • 1 pkt frzn minced spinach - (10 ounce) thawed, sqeezed dry

Directions

  1. Drain beans, then put in a saucepan; cover with water. Boil for 10 to 15 min. Brown sausage; drain off fat. Add in to slow cooker with beans and remaining ingredients. Cover and cook on LOW 8 to 12 hrs. Serve with Parmesan cheese and Italian bread.
