Ingredients
- 1 1/2 lb mussels scrubbed, and beards removed
- 3/4 lb octopus or possibly squid cut rings or possibly pcs
- 3/4 lb medium shrimp shelled, deveined
- 1/2 lb cooked crab meat
- 3 Tbsp. extra virgin olive oil
- 1 Tbsp. white wine vinegar
- 1 x garlic clove pressed
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 8 x Boston lettuce leaves
- 2 Tbsp. minced fresh parsley
- 1/2 x lemon thinly sliced
Directions
- Bring 1 c. of water to a boil over high heat in a large saucepot with a cover. Add in mussels; cook 10 min. Remove mussels from their shells and transfer to a large bowl. Throw away any unopened mussels.
- Bring a qt of lightly salted water to a boil. Add in octopus; cook 45 seconds, just till opaque. Remove with a slotted spoon and add in to bowl with mussels. Cook shrimp 2 to 3 min; just till cooked through. Remove with a slotted spoon and add in to bowl. Stir in crab.
- Add in oil, vinegar, garlic, salt, and pepper to seafood. Mix till thoroughly combined. Chill 2 hrs for flavors to develop.
- To serve, divide lettuce leaves on 4 plates. Mound seafood salad over lettuce; sprinkle with parsley and garnish with lemon slices.
