  • 1/2 lb Italian sausage
  • 1/2 c. Minced green pepper
  • 1 med Minced onion
  • 1 can Liquid removed tomatoes, (16 ounce.)
  • 1/2 loaf Italian bread
  • 3 x Large eggs
  • 2 1/2 c. Lowfat milk
  • 1 tsp Salt Grated Parmesan cheese

Directions

  1. Remove casing from sausage. Brown sausage in large skillet for 10 min, breaking it up with wooden spoon. Stir in 1/2 c. minced green pepper and minced onion. Cook another 5 min. Add in tomatoes and cook 15 min.
  2. Slice Italian bread. Place half the slices in bottom of a buttered 8 x 8 x 2-inch baking dish. Spread with sausage mix. Top with remaining bread.
  3. Beat Large eggs; stir in lowfat milk and salt. Pour over bread and sausage; sprinkle with grated cheese. Bake 1 hour in 325 degrees oven.
  4. Serves 4.
