  • 1 lb bulk Italian sausage
  • 1 med onion minced - (1/2 c.)
  • 1 x garlic clove crushed
  • 3 Tbsp. minced fresh parsley
  • 1 Tbsp. minced fresh (or possibly 1 tspn dry basil)
  • 1 tsp sugar
  • 1 can whole tomatoes - (14 1/2 ounce) undrained
  • 1 can tomato sauce - (15 ounce)
  • 12 x uncooked lasagna noodles - (abt 12 ounce)
  • 1 ct ricotta cheese or possibly small curd creamed cottage cheese - (15 ounce)
  • 1/4 c. grated Parmesan cheese
  • 1 Tbsp. minced fresh oregano leaves (or possibly 1 1/2 tspns dry oregano)
  • 2 c. shredded mozzarella cheese - (8 ounce)
  • 1/4 c. grated Parmesan cheese

Directions

  1. Cook sausage, onion and garlic in 10-inch skillet over medium heat, stirring occasionally, till sausage is no longer pink; drain.
  2. Stir in 2 Tbsp. of the parsley, the basil, sugar, tomatoes and tomato sauce, breaking up tomatoes. Heat to boiling, stirring occasionally; reduce heat to low. Simmer uncovered about 45 min or possibly till slightly thickened.
  3. Heat oven to 350 degrees. Cook and drain noodles as directed on package.
  4. Mix ricotta cheese, 1/4 c. Parmesan cheese, remaining 1 Tbsp. parsley and the oregano.
  5. Spread 1 c. of the sauce mix in ungreased rectangular baking dish, 13 by 9 by 2 inches. Top with 4 noodles. Spread 1 c. of the cheese mix over noodles; spread with 1 c. of the sauce mix. Sprinkle with 2/3 c. of the mozzarella cheese. Repeat with 4 noodles, the remaining cheese mix, 1 c. of the sauce mix and 2/3 c. of the mozzarella cheese. Top with remaining noodles and sauce mix. Sprinkle with remaining mozzarella cheese and 1/4 c. Parmesan cheese.
  6. Cover and bake 30 min. Uncover and bake about 15 min longer or possibly till warm and bubbly. Let stand 15 min before cutting.
  7. This recipe yields 8 servings.
