%20I%20would%20love%20to%20be%20able%20to%20make%20omelets%20well%20because%20I%20like%20to%20eat%20them,%20but%20mine%20end%20up%20very%20ugly%20and%20falling-apart-y%20and%20often%20runny%20on%20the%20inside.%20And%20when%20I%20say%20%E2%80%9Coften,%E2%80%9D%20I%20mean%20%E2%80%9Cpretty%20much%20always,%E2%80%9D%20and%20that,%20unfortunately,%20does%20not%20help%20with%20my%20complicated%20egg%20aversion.%3C/p%3E%3Cp%3ESo%20my%20answer%20to%20all%20my%20omelet%20problems%20are%20frittatas.%20They%20sound%20fancy%20and%20hard,%20but%20really,%20they%E2%80%99re%20way%20easier%20than%20omelets%20and%20come%20together%20in%20just%20a%20few%20minutes.%20In%20this%20month%E2%80%99s%20issue%20of%20Cooking%20Light,%20they%20have%20a%20whole%20spread%20on%20various%20frittata%20options,%20but%20really,%20you%20can%20do%20it%20yourself%E2%80%93the%20egg/milk/seasoning%20mixture%20is%20the%20same,%20and%20the%20cooking%20method%20is%20the%20same,%20but%20you%20can%20swap%20out%20the%20meat%20and%20veggies%20for%20whatever%20you%20prefer,%20just%20like%20an%20omelet.%20Ham,%20chicken,%20asparagus,%20gruyere,%20mozzarella,%20cheddar,%20pepper%20jack,%20tomatoes,%20mushrooms,%20asparagus,%20fresh%20herbs%E2%80%A6whatever%20strikes%20your%20fancy,%20throw%20it%20in%20there!%3C/p%3E%3Cp%3EOne%20of%20the%20great%20things%20about%20frittatas%20is%20that%20the%20leftovers%20hold%20up%20beautifully,%20so%20when%20you%E2%80%99re%20starving%20in%20the%20morning%20and%20trying%20to%20get%20your%20kids%20up%20and%20dressed%20and%20actually,%20like,%20moving%20instead%20of%20staring%20at%20a%20wall%20or%20something,%20you%20can%20grab%20a%20few%20bites%20here%20and%20there.%20When%20your%20two-year-old%20is%20eating%20crackers,%20string%20cheese,%20and%20frozen%20peas%20for%20lunch%20and%20you%E2%80%99re%20about%20to%20begrudgingly%20pick%20into%20the%20same%20thing,%20frittata%20to%20the%20rescue.%20When%20it%E2%80%99s%20dinnertime%20and%20the%20last%20thing%20in%20the%20world%20you%20want%20to%20do%20is%20make%20dinner?%20Frittata.%20It%E2%80%99s%20good%20cold,%20it%E2%80%99s%20good%20hot.%20It%E2%80%99s%20like%20the%20Stanley%20Tucci%20of%20the%20culinary%20world.%3C/p%3E%3Cp%3EThe%20first%20time%20I%20made%20this,%20I%20made%20it%20as%20written%20and%20then%20I%20left%20it%20under%20the%20broiler%20a%20little%20too%20long%20and%20it%20burned,%20which%20ended%20up%20being%20a%20good%20thing%20because%20there%20were%20things%20I%20definitely%20wanted%20to%20change%20when%20I%20made%20it%20again.%20I%20upped%20the%20salt,%20I%20threw%20in%20some%20green%20onions%20and%20garlic,%20I%20used%20grape%20tomatoes%20that%20I%20cooked%20until%20they%20were%20just%20about%20to%20burst,%20and%20I%20doubled%20the%20cheese%20because,%20you%20know,%20cheese.%20Even%20still,%20the%20calorie%20count%20is%20very%20modest%20(213%20calories%20if%20you%20cut%20it%20into%206%20pieces,%20which%20was%20plenty%20for%20the%20adults%20in%20our%20family).%3C/p%3E%3Cp%3EFor%20this%20frittata,%20you%E2%80%99re%20going%20to%20need%206%20eggs,%202%20egg%20whites,%20milk,%20salt,%20pepper%20or%20Tabasco%20sauce%20(I%20have%20a%20thing%20about%20black%20pepper%20in%20my%20eggs.%20Can%E2%80%99t%20do%20it.),%20Italian%20sausage,%20extra-virgin%20olive%20oil%20(I%20used%20OBB%E2%80%99s%20Extra-Virgin%20Garlic%20Olive%20Oil),%20baby%20kale%20(more%20about%20that%20in%20a%20minute),%20green%20onions,%20garlic,%20red%20bell%20pepper%20or%20whole%20grape%20tomatoes,%20and%20feta%20cheese.%3C/p%3E%3Cp%3ECrack%20the%20eggs%20and%20egg%20whites%20into%20a%20small%20mixing%20bowl.%20Add%20the%20milk,%20salt,%20and%20Tabasco%20sauce%20and%20whisk%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%209%E2%80%B3%20oven-safe%20skillet%20(a%20cast%20iron%20skillet%20is%20perfect),%20cook%20the%20sausage.%20Remove%20from%20pan%20and%20drain%20on%20a%20paper%20towel.%3C/p%3E%3Cp%3EReturn%20the%20pan%20to%20heat%20and%20heat%20the%20olive%20oil%20over%20medium%20heat.%20Now%E2%80%A6let%E2%80%99s%20talk%20about%20kale.%20Kale%20is%20super%20cool%20right%20now.%20I%20hate%20it.%20To%20me,%20it%20tastes%20like%20eating%20weeds.%20I%20laughed%20and%20laughed%20when%20I%20saw%20this%20clip%20because%20I%20feel%20it%20on%20so%20many%20levels:%3C/p%3E%3Cp%3EAdd%20the%20kale,%20green%20onions,%20and%20garlic%20and%20cook,%20stirring%20frequently,%20until%20the%20kale%20is%20wilted.%20Add%20the%20pepper%20or%20tomatoes%20and%20cook%20for%20a%20few%20additional%20minutes,%20until%20the%20pepper%20starts%20to%20become%20tender%20or%20the%20tomatoes%20are%20ready%20to%20burst.%3C/p%3E%3Cp%3ETurn%20the%20oven%20broiler%20to%20high.%3C/p%3E%3Cp%3ESprinkle%20the%20cooked%20sausage%20evenly%20over%20the%20veggies.%20Sprinkle%20the%20feta%20over%20the%20sausage,%20then%20carefully%20pour%20the%20egg%20mixture%20evenly%20over%20everything%20else.%20Cook%20for%205-6%20minutes%20over%20medium%20heat,%20completely%20leaving%20the%20pan%20alone.%20Place%20the%20pan%20in%20the%20heated%20oven%20for%202-3%20minutes%2
