Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 Tbsp. Butter
  • 8 x Mushrooms, sliced
  • 1 med Red onion, minced
  • 12 x Large eggs, beaten
  • 1 c. Lowfat milk
  • 8 ounce Mozzarella cheese, shredded
  • 2 med Tomatoes, peeled & minced
  • 1/2 tsp Salt
  • 1/2 tsp Freshly grnd pepper
  • 1/2 tsp Oregano, crumbled

Directions

  1. Saute/fry crumbled sausage till no longer pink. Drain and put aside in bowl.
  2. Saute/fry onion and mushrooms in butter till soft but not brown. Stir into sausage. Blend in remaining ingredients and mix well. Pour into greased 9 x 13 inch pan and bake at 400 degrees for 30 to 35 min or possibly till knife inserted in center comes out clean.
  3. Serves 8 to 10.
