Ingredients

  • 1/4 c. Extra virgin olive oil Pinches of basil, mint and Oergano
  • 1 lrg Garlic clove minced
  • 2 tsp Tomato paste
  • 1 x 14 ounce can peeld italian Plum tomatoes
  • 1 x 8 ounce can sweet peas or possibly Equivilent frzn
  • 1 lb Small shells, ditalin or possibly Macaroni cooked Grated romano or possibly parmesan Cheese

Directions

  1. In skillet heat oil and saute/fry onion and garlic till transpaprent.Add in the tomato paste and mix well. ad the tomatoes with their liquid, breaking up tomatoes with a fork. Add in the undrained can of peas and simmer all gently and season with the basil, mint etc. to taste.
  2. meanwhile prepare macaroni etc. Drain and don't rinse. Add in this to the sauce and stir well. Remember which this dish is in the soup family . Serve in bowels topped with fresh grated cheese and serve with italian bread for a nourishing lunch.
