This is a great salad, it keeps well in the fridge. Make a big batch and take it to work for lunches.

  • 1 cup cooked Israeli couscous
  • 1/2 cucumber- small diced
  • 1 yellow bell pepper- small diced
  • 2 green onions-minced
  • 4 tbsp fresh cilantro-minced
  • 1 lemon-juiced
  • 3 tbsp olive oil
  • sea salt
  • freshly ground pepper

Directions

  1. In a large bowl, combine all ingredients.
  2. Mix and enjoy!

    This salad was excellent. We added a little fllair such as avocado, tomatoes and sliced olives. Plus we used black truffle infused sea salt. We had no cilantro but it was terrific! Would definately recommend. Oh yes, it was simple and quick as well.
