Ingredients
- Irish Potato, Leek and Ham Soup - Pots and Pins
- 1 large leek
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 cup white onion, chopped
- 6 cups chicken stock
- 3 lbs. Yukon Gold potatoes, cut into 3/4-inch pieces, peels left on (divide potatoes in half if you don't want to blend them all)
- 2 cups ham, diced
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 2 cups milk
- Garnish: Tabasco sauce, optional, but a few drops are awesome, in my humble opinion
- fresh chives, minced, optional

,%20it's%20the%202nd%20largest%20file...desserts%20being%20the%20first.%20%20I'm%20so%20proud.%20%20We%20eat%20a%20lot%20of%20soup%20and%20this%20is%20a%20favorite%20of%20ours,%20and%20not%20just%20during%20Irish%20week,%20but%20all%20through%20the%20fall/winter%20and%20always%20after%20Easter...it's%20a%20great%20way%20to%20use%20up%20leftover%20Easter%20ham.%20%20The%20mister%20and%20I%20have%20already%20met%20our%20yearly%20corned%20beef%20and%20cabbage%20quota%20so%20this%20is%20what%20we'll%20be%20dining%20on%20come%20St.%20Paddy's%20Day%20-%20I'm%20told%20it's%20a%20sure-fire%20way%20to%20lure%20Leprechauns%20to%20our%20door!%3C/p%3E%3Cp%3EYou%20know%20you%20have%20to%20wash%20the%20leeks,%20not%20just%20rinse%20them,%20right?%20%20Dirt%20can%20collect%20waaaaaay%20down%20inside%20the%20leek%20so%20slice%20it,%20put%20in%20a%20colander%20and%20put%20the%20colander%20into%20a%20bowl%20of%20cold%20water%20so%20the%20leeks%20are%20floating.%20%20Swish%20it%20around%20a%20few%20times,%20pull%20up%20the%20colander%20and%20be%20amazed%20at%20all%20the%20little%20bits%20of%20dirt%20in%20the%20bottom%20of%20the%20bowl!%3C/p%3E%3Cp%3ENot%20to%20worry,%20if%20you%20are%20still%20one%20of%20the%20only%20people%20on%20the%20planet%20without%20a%20hand-held%20%22immersion%22%20blender,%20also%20called%20a%20stick%20or%20wand%20blender,%20you%20can%20use%20the%20old-fashioned%20kind%20of%20blender%20to%20puree%20this%20soup%20until%20it%20is%20totally%20creamy%20and%20smooth.%20%20(If%20you%20do%20use%20a%20regular%20blender,%20make%20sure%20to%20add%20soup%20in%20small%20batches.%20%20Hot%20liquids%20tend%20to%20blow%20the%20lid%20off%20when%20poured%20into%20a%20blender%20so%20never%20fill%20more%20than%20half%20full...it's%20all%20very%20scientific,%20you%20know,%20when%20you%20heat%20a%20gas%20it%20expands%20and%20when%20you%20put%20hot%20soup%20into%20a%20blender%20and%20put%20the%20lid%20on%20-%20well,%20stand%20clear%20because%20thar%20she'll%20blow!%20%20Make%20sure%20you%20put%20the%20lid%20on%20and%20hold%20it%20down%20or%20you'll%20be%20cleaning%20soup%20up%20off%20your%20walls,%20floors,%20ceiling...been%20there/done%20that!%3C/p%3E%3Cp%3EWe%20like%20to%20have%20chunks%20of%20potato%20in%20our%20soup%20so%20I%20only%20cook%20half%20of%20the%20potatoes%20with%20the%20leeks%20and%20onion%20and%20then%20I%20blend%20them,%20which%20makes%20the%20creamy%20base%20for%20this%20soup.%20%20Then%20I%20add%20the%20remaining%20potatoes%20and%20cook%20until%20they're%20done.%20%20It's%20a%20bit%20more%20time%20consuming,%20so%20if%20you're%20in%20a%20hurry%20and%20don't%20want%20to%20mess%20with%20another%20step,%20just%20cook%20all%20the%20potatoes%20at%20the%20same%20time%20and%20be%20done%20with%20it.%3C/p%3E%3Cp%3EAfter%20the%20soup%20is%20blended,%20the%20ham%20is%20added.%20%20Something%20about%20blended%20ham%20that%20just%20doesn't%20appeal%20to%20me!%20%20Stir%20the%20ham%20in%20and%20let%20it%20heat%20through...then%20you're%20ready%20to%20serve!%20%20This%20makes%20a%20good%20size%20pot%20of%20soup,%20enough%20to%20serve%206%20people%20and%208%20Leprechauns.%20%20C'mon,%20make%20this%20soup%20and%20get%20your%20Irish%20on,%20even%20persnickety%20eaters%20like%20the%20mister%20loves%20this%20soup%20-%20it's%20basic%20-%20but%20in%20the%20best%20tasting%20way%20possible.%3C/p%3E%3Cp%3ESplit%20leek%20in%20half%20lengthwise%20and%20cut%20each%20half%20into%201/4-inch%20pieces.%20%20Clean%20leek%20by%20putting%20all%20the%20pieces%20into%20a%20colander%20and%20then%20immersing%20the%20colander/pieces%20in%20a%20bowl%20filled%20with%20cold%20water.%20%20Remove%20from%20water%20and%20drain%20in%20the%20colander.%3C/p%3E%3Cp%3EHeat%20oil%20and%20butter%20in%20a%20large%20heavy%20pot.%20%20Add%20leek%20and%20onion,%20cover%20and%20cook%20over%20medium%20heat%20for%205%20minutes,%20until%20soft%20and%20slightly%20browned.%20%20Add%20stock%20and%20half%20of%20the%20potatoes.%20(If%20you%20don't%20care%20about%20having%20pieces%20of%20potato%20in%20your%20soup,%20add%20all%20the%20potatoes%20now.)%20%20Add%20salt%20and%20pepper.%20%20Bring%20to%20a%20boil.%20%20Reduce%20heat%20and%20simmer%20for%2020%20minutes%20or%20until%20potatoes%20are%20fork%20tender.%20%20Using%20an%20immersion%20blended,%20blend%20the%20soup%20until%20it%20is%20smooth%20and%20creamy.%20%20If%20you%20don't%20have%20an%20immersion%20blender%20pour%20soup%20into%20regular%20blender%202%20cups%20at%20a%20time%20to%20blend.%3C/p%3E%3Cp%3EStir%20in%20milk,%20mixing%20until%20smooth,%20then%20add%20remaining%20potatoes%20and%20ham%20and%20cook,%20over%20medium-low%20heat%20for%20an%20additional%2020%20to%2025%20minutes,%20or%20until%20potatoes%20are%20fork%20tender.%20%20Serve%20hot.%20%20Serves%206.%20%20Garnish%20with%20fresh%20chives%20and/or%20Tabasco%20Sauce.%3C/p%3E){kind=link}
