Ingredients
- Irish Potato, Leek and Ham Soup - Pots and Pins
- 1 large leek
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 cup white onion, chopped
- 6 cups chicken stock
- 3 lbs. Yukon Gold potatoes, cut into 3/4-inch pieces, peels left on (divide potatoes in half if you don't want to blend them all)
- 2 cups ham, diced
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 2 cups milk
- Garnish: Tabasco sauce, optional, but a few drops are awesome, in my humble opinion
- fresh chives, minced, optional
