Directions

  1. Place 1/4 c. hot water in large hot bowl. Sprinkle in yeast; stir till dissolved. Add in remaining water, sugar, dry lowfat milk, butter, salt, bran and 2 c. flour. Beat 2 min at medium speed of electric mixer, scraping bowl occasionally. Add in Large eggs and 1 c. flour. Beat 2 min at high speed. Stir in sufficient remaining flour to make soft dough. Knead till smooth and elastic, about 8 to 10 min. Place dough in lightly greased bowl, turn to grease top. Cover with plastic wrap and chill for future use. Punch dough down whenever doubled in size and use within three days.
  2. Remove dough to lightly floured surface. Divide into 36 equal pcs. Shape into smooth balls. Place balls, about 2 inches apart on large greased baking sheets.
  3. Cover; let rise in hot, draft-free place till doubled in size, about 40 to 45 min. Bake at 375 F for 13 to 15 min or possibly till done. Remove from pans; cold on wire rack.
  4. To bake without refrigerating: After placing dough in lightly greased bowl, cover; let rise in hot, draft-free place till doubled in size, about 45 to 60 min. Shape dough and proceed as directed.
