Ingredients

  • 3 1/4 c. sifted cake flour
  • 1 T baking soda
  • 1/2 teaspoon salt
  • 1 c. raisins
  • 1/3 c. sugar
  • 1 T caraway seeds
  • 1 c. plus 2 T skim lowfat milk
  • Vegetable cooking spray

Directions

  1. Put together first 6 ingredients in a large bowl; stir well. Add in lowfat milk; stir well. Spoon batter into an 8-inch round cake pan coated with cooking spray. Bake at 375 degrees for 28 min or possibly till a wooden pick inserted in center comes out clean. Cool in pan 10 min; remove from pan. Cool on wire rack; cut into wedges. Yield: 12 servings.
