Ingredients
- Halibut with Sauteed Treviso Radicchio and Shiitake Vinaigrette
- 2 1/2 lb halibut filets, skin removed
- Olive oil
- 1/2 lb shiitake mushrooms
- 2 T finely minced shallot
- 2 T finely minced garlic
- 1 cup chicken stock
- 1 head treviso radicchio, root remove and "fingers" separated
- 2 t sherry vinegar
- 1 t aged balsamic vinegar or saba
- Kosher salt
- Fresh ground black pepper
- Chives, finely minced
- Chervil, picked
- Tarragon, chopped

,%20and%20even%20sunny!%20I%20felt%20like%20I%20wanted%20something%20light%20and%20refreshing,%20but%20still%20being%20warm%20and%20hearty.%20%20Sound%20impossible?%20This%20worked%20out%20pretty%20well!%20%20The%20fishmonger%20had%20a%20beautiful%20filet%20of%20halibut,%20and%20I%20realized%20how%20long%20it'd%20been%20since%20I've%20even%20eaten%20halibut,%20so%20the%20choice%20was%20clear!%20%20Picked%20up%20a%20few%20other%20goodies,%20and%20I%20was%20on%20my%20way%20back%20to%20the%20kitchen!%20%20Shiitake%20mushrooms,%20rosso%20de%20treviso%20radicchio,%20and%20of%20course%20the%20halibut.%20%20I%20also%20picked%20up%20some%20chives,%20tarragon,%20and%20chervil%20(tarragon's%20quieter,%20more%20reserved%20little%20cousin)%20-%20because..why%20not!%3C/p%3E%3Cp%3EWhen%20you%20start%20to%20cook,%20remove%20the%20halibut%20from%20the%20refrigerator%20and%20generously%20salt.%20%20Leave%20out%20at%20room%20temperature.%20%20Start%20with%20the%20mushrooms%20-%20in%20a%20saut%C3%A9%20pan,%20heat%20up%20about%201/4%20cup%20olive%20oil%20over%20medium%20heat.%20%20While%20the%20oil%20is%20coming%20to%20temperature,%20remove%20the%20stems%20from%20the%20shiitakes,%20and%20thickly%20slice.%20%20When%20the%20oil%20is%20hot,%20toss%20in%20the%20mushrooms%20and%20cook%20until%20semi-soft,%20about%205%20minutes.%20%20%20Pour%20in%20chicken%20stock%20and%20bring%20to%20a%20bowl.%20%20Reduce%20to%20a%20simmer,%20and%20allow%20to%20cook%20for%20another%205%20minutes,%20until%20the%20mushrooms%20are%20soft%20but%20not%20mushy.%20%20When%20the%20mushrooms%20are%20done,%20remove%20with%20a%20slotted%20spoon%20and%20keep%20warm.%20%20Set%20aside.%20%20You%20should%20have%20about%206%20T%20left%20of%20cooking%20liquid%20-%20if%20there%20is%20more,%20reduce%20it%20down%20to%20that%20quantity.%20%20Pour%20out%20in%20a%20small%20jar%20and%20let%20come%20to%20room%20temperature.%3C/p%3E%3Cp%3EAnd%20now%20for%20the%20radicchio.%20%20In%20the%20same%20pan,%20heat%20up%20another%202%20T%20of%20olive%20oil%20over%20medium%20heat.%20%20When%20hot,%20toss%20in%20the%20radicchio%20and%20saut%C3%A9,%20stirring%20often.%20%20Don't%20let%20the%20radicchio%20burn,%20but%20make%20sure%20to%20cook%20out%20some%20of%20the%20bitterness.%20%20When%20just%20fork%20tender%20at%20the%20rib,%20pour%20in%201%20t%20of%20sherry%20vinegar%20and%20toss.%20%20Taste%20for%20seasoning%20and%20add%20both%20salt%20and%20pepper.%20%20Set%20aside.%20%20When%20the%20cooking%20liquid%20from%20before%20has%20cooled,%20add%20in%201%20T%20onion,%201%20T%20garlic,%201%20t%20sherry%20vinegar,%201%20t%20balsamic%20vinegar,%203%20T%20olive%20oil,%20and%20salt%20and%20pepper%20to%20taste.%20%20Screw%20the%20lid%20on%20and%20shake%20the%20jar%20to%20emulsify%20the%20vinaigrette.%20%20Set%20aside.%3C/p%3E%3Cp%3ENow%20for%20the%20halibut!%20%20Heat%203%20T%20of%20olive%20oil%20in%20a%20frying%20pan%20over%20medium-high%20heat.%20%20When%20the%20oil%20is%20shimmering,%20place%20the%20halibut%20flesh%20side%20down%20in%20the%20pan%20and%20let%20cook.%20%20Cook%20for%205-6%20minutes,%20depending%20on%20the%20thickness%20of%20your%20halibut%20-%20either%20way,%20ensure%20that%20you%20get%20a%20crispy,%20golden%20crust%20before%20you%20flip%20the%20fish.%20%20When%20the%20fish%20%22let's%20go%22%20of%20the%20pan,%20flip%20and%20cook%20on%20the%20other%20side.%20%20I%20like%20my%20fish%20just%20cooked%20through%20-%20to%20the%20point%20that%20you%20can%20flake%20the%20flesh,%20but%20that%20it's%20still%20super%20tender%20and%20moist.%20%20As%20soon%20as%20you%20can%20easily%20stick%20a%20spatula%20through%20the%20flesh,%20it's%20finished!%20Remove%20from%20heat%20and%20get%20ready%20to%20plate.%3C/p%3E%3Cp%3EFirst,%20divide%20the%20radicchio%20between%20two%20wide%20plates.%20%20Toss%20the%20mushrooms%20with%201/4C%20of%20the%20vinaigrette,%20and%20plate%20the%20mushrooms%20atop%20the%20radicchio%20-%20reserve%20the%20liquid!%20%20%20Next,%20top%20the%20mushrooms%20with%20a%20piece%20of%20halibut%20and%20sprinkle%20with%20herbs.%20%20%20Finish%20with%20a%20few%20spoonfuls%20of%20the%20vinaigrette%20and%20a%20bit%20of%20salt%20and%20pepper.%20%20Dig%20in%20and%20enjoy!%3C/p%3E%3Cp%3ESo%20tasty!%20Halibut%20is%20one%20of%20my%20favorite%20fishes%20(fish?%20whatever),%20so%20I'm%20biased%20regardless%20of%20what%20the%20other%20components%20of%20the%20dish%20were.%20%20But%20that%20doesn't%20matter%20one%20bit,%20because%20the%20other%20components%20went%20together%20perfectly%20with%20the%20halibut.%20%20The%20mushrooms%20gave%20a%20great%20earthiness,%20but%20weren't%20too%20heavy%20for%20the%20dish,%20while%20a%20nice,%20slight%20bitterness%20came%20out%20of%20the%20saut%C3%A9ed%20radicchio.%20%20The%20fresh%20herbs%20and%20vinaigrette%20brightened%20up%20the%20whole%20dish%20to%20bring%20it%20all%20together.%20%20%20Quite%20tasty!%3C/p%3E){kind=link}
