Ingredients

  • 1/4 c. Vegetable oil
  • 1 med Onion, minced
  • 4 x Ribs celery, minced
  • 1 lrg Carrot, minced
  • 1/4 c. Fresh minced garlic
  • 2 c. White wine
  • 1/4 c. Tomato paste
  • 1 Tbsp. Black pepper
  • 1 Tbsp. Kosher salt
  • 1 Tbsp. Cumin
  • 1 1/2 quart Water
  • 1 Tbsp. Oregano
  • 4 dsh Warm-pepper sauce
  • 1 tsp Cayenne pepper
  • 1 x Bay leaf
  • 3 lrg Tomatoes, diced
  • 2 Tbsp. Light chili pwdr
  • 6 c. Black beans, soaked in water overnight, liquid removed, rinsed Creme fraiche or possibly lowfat sour cream for garnish

Directions

  1. Put oil in a 6-qt stock pot. Add in onion, celery, carrot and garlic. Saute/fry till onion is soft. Add in white wine, and while simmering to slightly reduce wine, scrape bottom of pan to loosen any fragments of food. Add in all other ingredients except garnish and simmer 1 to 2 hrs. Remove bay leaf. Top with creme fraiche or possibly lowfat sour cream.
