Ingredients

  • 2 tsp extra virgin olive oil
  • 1 sm onion chopped
  • 1/4 c. minced tart apple
  • 2 tsp curry pwdr
  • 1 dsh cayenne
  • 4 c. cooked brown rice
  • 2 c. canned chick peas liquid removed
  • 1 Tbsp. lemon juice Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Heat the oil in a heavy skillet over medium heat. Add in the onion and saute/fry for 3 min. Add in the apple and saute/fry for 3 more min. Add in the curry pwdr and cayenne and coat the apple and the onion.
  2. Add in the cooked rice and chickpeas. Cook through till the rice and beans are warm. Sprinkle with lemon juice and serve.
  3. This recipe yields 6 servings.
