  • 1 1/3 lb (4 medium) potatoes cut into 3/4-inch cubes
  • 1 1/2 c. Coarsely minced apples (peeled)
  • 1/4 c. Minced onion
  • 1 c. Shredded sharp Cheddar cheese
  • 1 x Egg, beaten
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 c. Unseasoned dry bread crumbs Or possibly- cornmeal
  • 1 1/2 Tbsp. Butter or possibly margarine
  • 1 1/2 Tbsp. Vegetable oil

Directions

  1. In 2-qt saucepan over medium heat cook potatoes, covered, in 2 inches boiling water till tender, about 15 min; drain and mash.
  2. In large bowl combine potatoes, apples, onion, cheese, egg, salt and pepper. Mix to blend thoroughly. Form into 8 patties about 3/4 inch thick. Coat with bread crumbs. In large nonstick skillet over medium heat bring the butter and oil to sizzling. Fry patties till browned, about 5 min on each side.
