Ingredients
- 1Â 1/3 lb (4 medium) potatoes cut into 3/4-inch cubes
- 1Â 1/2 c. Coarsely minced apples (peeled)
- 1/4 c. Minced onion
- 1 c. Shredded sharp Cheddar cheese
- 1 x Egg, beaten
- 1 tsp Salt
- 1/4 tsp Pepper
- 1/2 c. Unseasoned dry bread crumbs Or possibly- cornmeal
- 1Â 1/2 Tbsp. Butter or possibly margarine
- 1Â 1/2 Tbsp. Vegetable oil
Directions
- In 2-qt saucepan over medium heat cook potatoes, covered, in 2 inches boiling water till tender, about 15 min; drain and mash.
- In large bowl combine potatoes, apples, onion, cheese, egg, salt and pepper. Mix to blend thoroughly. Form into 8 patties about 3/4 inch thick. Coat with bread crumbs. In large nonstick skillet over medium heat bring the butter and oil to sizzling. Fry patties till browned, about 5 min on each side.
