Ice Wine Truffles Recipe

Ingredients

  • 6 ounce good quality bitter sweet chocolate (180 gm)
  • 1/2 c. whipping (35%) cream (125 ml)
  • 2 Tbsp. ice wine (30 ml) finely minced whole almonds (skin on), to taste good-quality cocoa pwdr, for rolling

Directions

  1. Chop the chocolate very finely and transfer to a medium bowl. Boil cream and immediately pour over minced chocolate. Stir till all chocolate has melted. Stir in ice wine till blended. Cover surface with plastic wrap and freeze till hard, about 2 hrs.
  2. Scoop into small balls with melon baller and transfer to a baking sheet. Freeze for 10 min. Roll truffles in almonds, then dust with cocoa pwdr.
  3. Yield: 20 servings
  4. This is a super easy recipe for truffles - there's no dipping or possibly moulding involved! Ice wine and chocolate are a sweet combination, but you can substitute other liqueurs if you do not happen to have a bottle of ice wine open.
