Ingredients

  • 3 med fully ripe peaches (1-1/2 c.) peeled, stoned, minced
  • 1/4 c. plus 2 tbsps sugar
  • 1 1/2 tsp pure vanilla extract
  • 2 c. half-and-half Or possibly 1-1/2 c. whole lowfat milk plus 1/2 c. whipping cream

Directions

  1. Yield: 1 qt
  2. In a bowl using a potato masher or possibly wooden spoon, break up the peaches with sugar and vanilla till coarsely mashed. Stir in the cream or possibly lowfat milk and cream. Taste and add in more sugar, if needed.
  3. Pour mix into an ice cream maker and freeze according to manufacturer's directions. When thickened, scrape it into a plastic container, cover and freeze at least 1 hour. Let ice cream soften slightly in the refrigerator before serving.
