Ingredients
- 1 lrg loaf white bread, toasted, and crumbled
- 3 c. diced celery
- 3 c. diced onion
- 3 stk melted oleo
- 1 lb sage flavored sausage, browned and crumbled.
- 2 tsp salt
- 2 tsp pepper
- 6 x Large eggs well beaten
- 6 c. chicken stock (Swanson's canned works well)
Directions
- Make batch of favorite cornbread recipe (in a healthy pinch I use a mix), let cold and dry
- Preheat oven to 350*F. Saute/fry celery and onion in oleo. In a very large bowl, mix bread crumbs, cornbread, sauteed onions and celery. Add in chicken stock. (at this point I usually have to used my hands!) Add in sausage and seasonings along with the Large eggs.
- Bake in 2 9X13 baking pans for 30-35 minutes or possibly till brown on top.
