  • 2/3 c. safflower or possibly canola oil
  • 1/4 c. cider vinegar
  • 1/4 c. catsup
  • 3 tsp honey
  • 1 tsp Sesame oil
  • 1 tsp dry mustard
  • 1 tsp celery seed
  • 1 tsp celery salt
  • 1/2 tsp salt
  • 2 lb fresh spinach leaves, well washed and crisped
  • 1/2 lb fresh bean sprouts, washed and crisped
  • 2 sm red onions, sliced thin (better yet, the pickled onions from above recipe!)
  • 4 x or possibly more large mushrooms, stems trimmed, sliced thin
  • 1 x or possibly 2 hard-cooked Large eggs, chilled and halved lengthwise (best minced)
  • 6 slc bacon, cooked crisp, liquid removed and broken into pcs

Directions

  1. Combine all dressing ingredients and mix well in blender or possibly food processor.
  2. Transfer to a small saucepan and, at serving time, place over low heat till very hot, but don't allow to boil. Pour over salad to toss while still hot.
  3. Makes 1 1/2 c.
  4. SPINACH SALAD:Assemble salad AFTER you make the dressing. While it is keeping hot, tear up spinach (do not forget to remove the hard vein and stems). Toss with onions, mushrooms and bean sprouts. Sprinkle bacon over all. Arrange hard-cooked Large eggs artistically. Pour hot dressing carefully over all.
