Ingredients
- 1 c. White wine
- 1/4 lb Peeled medium prawns
- 1/4 lb Scallops
- 6 x Mussels in shell -- scrubbed
- Â Â Well
- 10 ounce Uncooked rice or possibly soba
- Â Â Noodles
- 4 tsp Finely chopped garlic
- 1/2 c. Chopped green onions --
- Â Â Including green tops
- 2 tsp Cayenne or possibly warm-pepper
- Â Â Flakes
- 4 tsp Tahini
- 1 tsp Dark sesame oil
- 2 Tbsp. Low-sodium soy or possibly tamari
- Â Â Sauce
- 1/2 tsp Honey
- 1 tsp Grated gingerroot
- Â Â Endive or possibly leaf lettuce --
- Â Â For lining platter
- 1/2 c. Peeled cucumbers -- halved &
- Â Â Sliced
- 1/2 c. Red bell pepper --
- Â Â Julienned
Directions
- 1. In a saucepan over medium-high heat, bring wine to boil. Add in prawns, scallops, and mussels in shell, cover, and cook 2 min. Drain and rinse under cool water. Remove mussels from shell and set seafood aside.
- 2. In a large pot over medium-high heat, bring 2 qts water to a boil.
- Add in noodles and cook till al dente (5 to 8 min). Drain and refresh under cool water. Set aside.
- 3. In large bowl mix together garlic, green onions, cayenne, tahini, sesame oil, soy sauce, honey, and gingerroot. Add in noodles and seafood and mix well. Let refrigeratefor 30 min, if you like.
- 4. To serve, line a large platter with lettuce or possibly endive. Pile noodles in center. Arrange cucumbers and red bell pepper around noodles.
