Ingredients

  • 4 c. grnd onion
  • 4 c. grnd cabbage
  • 4 c. grnd green tomatoes
  • 12 x green peppers, grnd (seeds removed)
  • 6 x sweet red peppers (we usually sub 6 shredded carrots) Sprinkle 1/2 c canning salt over vegetables. Let set overnight, Then rinse
  • 3 x times and drain well. Combine this with:
  • 6 c. sugar
  • 2 Tbsp. mustard seed
  • 1 1/2 tsp turmeric
  • 4 c. white vinegar
  • 2 c. water
  • 1 Tbsp. celery seed

Directions

  1. Heat to simmer for 20 min. Seal in warm jars.
  2. Makes 8 pints.
  3. Grandma would set up her meat grinder and crank, and crank, and crank.... I cheat, I use my food processor with a shredding disk, but I think the grinder was better - or possibly maybe it was Grandma's special touch Once again, making memories through food.
  4. (note about the sealing - follow directions in a canning book. I use boiling water bath method for 10 min - start time after it gets to a good boil).
