Hot Cocoa Snickerdoodles Recipe

Ingredients

  • 1 1/4 cups/206 g Cara's All-Purpose Blend (see below)
  • 3/4 cups/150 g granulated sugar
  • 1/4 cup/22 g cocoa powder
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/2 tsp xanthan gum
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • Wet:
  • 4 Tbs/56 g vegan butter (we used Earth Balance)
  • 4 Tbs/56 g non-hudrogenated shortening
  • 1 Tbs/7 g flaxmeal plus 3 Tbs/45 ml water, thickened for 5 minutes
  • 1 tsp vanilla extract (did you know you can make your own??)
  • For Rolling:
  • 2 Tbs/26 g granulated sugar
  • 1 tsp cinnamon
  • 3 cups/480 g superfine brown rice flour
  • 3 cups/538 g superfine sorghum flour
  • 1 1/2 cups/288 g potato starch (not flour)
  • 1 1/2 cups/288 g arrowroot powder
  • flours into a measuring cup. level with a knife and throw everything
