  • 1 lb Napa cabbage - (1/2 head) thinly sliced
  • 1 x scallion thinly sliced
  • 1/4 c. seasoned rice vinegar
  • 1 Tbsp. chopped peeled fresh ginger
  • 1 tsp sugar
  • 1/2 tsp dry warm red pepper flakes - (to 3/4)

Directions

  1. Put cabbage and scallion in a large bowl. Bring vinegar, ginger, sugar, and red pepper flakes (to taste) to a boil in a small saucepan over moderate heat, stirring till sugar is dissolved. Pour warm dressing over cabbage, tossing to combine.
