Directions

  1. Drain salmon or possibly tuna; break into large chunks. Add in mayonnaise, parsley, onion, pimento, lemon juice, and pepper. Toss to mix. Mix in 1/2 c. cheese. Spread about 1/4 c. mix on each slice of bread. Sprinkle remaining cheese over mix. Broil about 6 inches from heat, 3 to 4 min, or possibly till cheese melts and tops are golden brown. English muffins may be used.
