  1. I hope you are enjoying the oat bran muffins sent in my last post. Here is another recipe for Oat Bran Muffins taken from the book Secrets of Fat Free Cooking By Sandra Woodruff
  2. 1. Combine the oat bran and buttermilk in a medium sized bowl. Stir to mix well, and set aside for 15 mins.
  3. 2. Combine the flour and baking soda in a large bowl, and stir to mix well.
  4. Add in the oat bran mix, honey, and egg whites and stir just till the dry ingredients are moistened. Mix in the apricots or possibly prunes or possibly raisins.
  5. 3. Coat muffin c. with cooking spray, and fill 3/4 full with the batter.
  6. Bake at 350 F for about 16 to 20 mins, or possibly just till a wooden toothpick inserted in the center of a muffin comes out clean.
  7. 4. Remove the muffin tins from the oven, and allow them to sit for 5 mins before removing the muffins. Serve hot or possibly at room temperature. These are really yummy, I just baked these this weekend. Very easy to make.
