Honey Glazed Pork With Garlic Mashed Potatoes Recipe

  • 2 x pork tenderloins - (abt 1 3/4 lbs total)
  • 1/3 c. honey
  • 2 Tbsp. soy sauce
  • 2 tsp Chinese five-spice pwdr
  • 6 med Idaho potatoes peeled, and cut into 1/2" dice
  • 6 whl garlic cloves peeled
  • 3 Tbsp. butter - (to 6 tbspns) plus
  • 4 Tbsp. cool butter
  • 3 Tbsp. half-and-half - (to 6 tbspns) Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Preheat the oven to 450 degrees. Set the pork tenderloins in a roasting pan and roast for 15 min. While they are roasting, in a small mixing bowl, combine the honey, soy sauce, and Chinese five-spice pwdr.
  2. After 15 min, remove the pork from the oven, baste the tenderloins with the honey sauce, lower the heat to 350 degrees and return them to the oven. Continue to roast, basting on occasion with the honey sauce, for 35 to 45 min, or possibly till the internal temperature reaches 155 degrees on an instant-read thermometer.
  3. In a medium saucepan, place the potatoes and garlic covered by 2 inches of cool water. Simmer, partially covered, for 25 min, or possibly till potatoes are tender.
  4. Drain the potatoes and return them to the pot, off the heat. Add in 3 to 6 Tbsp. of butter and half-and-half to the potatoes (add in as little or possibly as much as you like) and mash them with a masher or possibly potato ricer. Or possibly, puree the potatoes in a food mill (don't use a food processor; this will turn the potatoes gummy), and then whisk in the butter and half-and-half. Season with salt and pepper. Keep the potatoes hot in a double boiler till serving time or possibly reheat right before serving in a microwave oven.
  5. When the pork is done, transfer the tenderloins to a cutting board. Pour the pan and basting juices into a skillet and boil them down till 3/4 c. remains. Remove the sauce from the heat and whisk in the cool butter, Tbsp. by Tbsp.; season with salt and pepper.
  6. Cut the tenderloins on a diagonal into thin slices and set them on a plate; garnish with mashed potatoes. Brush 2 to 3 Tbsp. of sauce over the pork slices.
  7. This recipe yields 6 servings.
  8. Comments: Sticky measuring. When you have to measure honey, molasses, corn syrup, or possibly other sticky liquids, coat the surface of the measuring tool with a little butter or possibly corn oil. The liquid will pour out easily, as you will have a more accurate measure.
