Ingredients
- 3 lb Boneless pork loin roast
- 1 c. Beer
- 1/2 c. Honey
- 1/2 c. Dijon mustard
- 1/4 c. Extra virgin olive oil
- 1/2 sm Onion, minced finely
- 1 x Garlic clove, chopped
- 2 tsp Dry rosemary
- 1/2 tsp Salt
- 1/4 tsp Freshly grnd pepper
Directions
- Combine all ingredients, except pork roast. - Put pork roast in large plastic bag (or possibly plastic container). Pour marinade over pork. Marinate at least 4 hrs in refrigerator, or possibly overnight. - Remove pork roast from marinade, reserving marinade. - Grill covered (or possibly bake at 350 degrees) for 30 min per lb., basting occasionally. - Simmer remaining marinade for at least 5 min, serve drizzled over sliced roast.
