Ingredients
- 1 pkg. beef stew meat (no fat)
- Salt and pepper to taste
- 1 pkg. (frzn silver queen corn off the cob, creamed if you have some)
- 1 pkg. frzn okra (16 ounce.) or possibly fresh
- 1 lg. potato (cut into tiny cubes)
- 1 lg. carrot (cut into tiny cubes)
- 1 lg. can tomato or possibly V8 juice
- 2 cubes beef bouillon cubes
Directions
- You can add in 1/4 c. uncooked rice if you want. Cook beef in large pot with about 8 c. of water, salt and pepper. Bring to a boil and simmer till meat falls apart, about 3 hrs. Add in okra continue to simmer till okra falls apart (about 1 hour). Take a potato masher and mash okra. Take meat out of pot, cut or possibly shred it with a knife. Return to pot. May have to keep adding water; try to keep at least 8 c. of water. Add in 2 bouillon cubes to the pot. Add in carrot, rice and potato cubes. Continue cooking till tender (about 1 hour). Add in 1 package silver queen corn and 1 large can tomato juice. Salt and pepper to taste. Bring to boil. Serve with cornbread.
