Homemade Swedish Pancakes Recipe

I love swedish pancakes and have made them for a few years from a mix I bought at Trader Joes. I was out of the mix a few weeks ago, so I tried making them from scratch. It turned out to be incredibly simple and the kids love these as much if not more as the pre-packaged mix. It's also quite a bit cheaper and means one less box I need to keep in the cupboard. If you haven't tried swedish pancakes before, you really have to. The chewy, crepe-like texture is a yummy diversion from fluffy, American pancakes. Directions

  1. Beat egg and milk together in a medium bowl with a whisk or fork
  2. In a large bowl, add the flour, sugar, and salt. Stir together. Add the egg an milk mixture and stir together. (The batter will seem to thin if you have not made swedish pancakes before. Don't worry, it holds together!)
  3. Heat a large non-stick skillet over medium heat. Add a small sliver of butter to the pan and move around by lifting and tilting the pan or by using a spatula or wooden utensil. Add the package mix in large spoonfuls, enough to make a coaster sized pancake. I get 4 to a pan. You can make swedish pancakes as large as you like however, so experiment with whatever size works for you. Flip the pancakes after about 1 minute. Then take off after about 30 seconds (90 seconds in total). Remove the pancakes to a plate, add another thin slice of butter, and repeat. You can keep the finished pancakes in a warm oven or cover them with a clean towel to keep warm.
  4. Serve with fresh berries, other fruit, powdered sugar and/or syrup.

        Swedish Pancakes! I haven't thought of them in years. The traditional Lingonberry compote is hard to find but like you say...any fresh berries would be good.
        It will be hard to keep it in the Swedish category for me, having so much marscapone in my kitchen.
