"Homemade" Potato Soup Crockpot Recipe

Ingredients

  • 6 x potatoes peeled, and cut into bite-size pcs
  • 2 x leeks washed, sliced
  • 2 x onions minced
  • 1 x carrot scraped, sliced
  • 1 x celery stalk sliced
  • 4 x chicken bouillon cubes
  • 1 Tbsp. parsley flakes
  • 4 c. water
  • 1 1/2 tsp salt or possibly to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. butter
  • 1 can evaporated lowfat milk - (13 ounce) Minced chives for garnish

Directions

  1. Put all ingredients except lowfat milk and chives in crockpot. Cook on LOW 10 to 12 hrs or possibly HIGH 3 to 4 hrs.
  2. Stir in lowfat milk in the last hour. Serve topped with chives.
