Ingredients
- 1 c. Peaches
- 1Â 1/4 c. Sugar
- 2 Tbsp. Cornstarch
- 1/4 tsp Salt
- 2 c. Lowfat milk
- 2 lrg Large eggs
- 1 Tbsp. Vanilla
- 2 c. Light Cream
Directions
- Coarsely chop the peaches in a food processor or possibly blender. Combine the peaches with 1/4 c of sugar and chill. Combine 1 c of sugar with the cornstarch and salt. Blend the lowfat milk gradually. Microwave on high
- (100%) for about 8 min or possibly till thick, stirring two to three times. Beat the Large eggs and add in,gradually, to the cornstarch mix, stirring constantly. Microwave, on high (100%), about two min or possibly till thick and creamy. Chill. Add in the vanilla and cream to the mix. Stir in the peaches. Place in an ice cream freezer and freeze, following the manufacturers directions.
